Its value has been kept permanently high by labor-intensive harvesting methods which require around 200,000 delicate red strands to be hand-picked from 70,000 Crocus sativa flowers for each pound. The undisputed capital for saffron production is Iran, where the tradition dates back over 3,000 years. Iran accounts for over 90 percent of the global production of saffron; 250 tons are produced worldwide each year. What saffron? 

Negin Saffron

This filament type, usually obtained from “bunched saffron” and “Poushal Saffron” which has no style & pollen and just consists of red parts of stigma with a high power of coloring and aroma. Negin and Sargol are the same in quality and color power but Negin is a bit larger in size and it more luxury.

The yellowish part of the threads is removed by hand, one by one, resulting in saffron with higher coloring and aromatic power.

Sargol Saffron

 This filament type, usually obtained from “bunched saffron” and “Poushal Saffron” which has no style & pollen and just consists of red parts of stigma with a high power of coloring and aroma.


Sargol saffron Stigmas range from 3/8" to 1/2" in length. In many other countries it is referred to as coupe saffron, cut or all red stigma.

This is the most important part of the saffron process. By cutting the saffron stigmas apart prior to drying them, the moisture will evaporate out and no moisture remains inside the saffron stigma. When you leave the stigmas attached to each other, moisture is trapped inside the stigma of saffron. This shortens the shelf life and quality of the goods ( saffron ) . The drying process activates the chemical compounds, which release aroma, color and flavor. You can tell high moisture content in saffron by the soft or spongy texture to the touch. Moist saffron will develop a musty smell instead of saffron's distinct clean aroma. Our Sargol saffron's moisture is as low as 2% , and it could rise up to 6% , but u should be careful at range of 2% more than 6% to prevent damaging, and its aroma is pleasantly memorable and distinct. Sargol stigmas dried this way are brittle to the touch. You can crush them into powder between your fingers or with just a little pressure between two metal spoons.

Poushali Saffron

This type has obtained at the beginning of harvest, a little longer than red parts of stigma that is usually in the form of triple filament. The color of the end part becomes pale red and orange that is in the size of 3 to 5 mm after the existing joint among the 3 filaments. “Poushal” means massive for its volume resulted from the time and method of harvesting and drying. 

“Poushal” has the same power of coloring and aroma as “All red filaments” type and it usually use for fantasy and luxury packing.

Pushali could be packed in any bigger packing because of its shape that has more volume rather than sargol and negin. And will be damaged less than the others.
